Interior wood staining and varnish
Stain shows everything underneath it, so the sanding is the job.
Paint hides a poor surface; stain magnifies one. Any scratch, glue mark or patch of uneven sanding will drink differently and show as a dark or light stripe once the stain is on. There is no fixing it afterwards.
